Rotini with sausages & roasted peppers in a creamy kale Alfredo sauce

Creamy pasta loaded with sausages, roasted peppers, and hidden kale in the sauce is what makes this dish delicious!

Rotini with sausages and roasted peppers in a creamy kale Alfredo sauce

This rotini pasta recipe is loaded with the good stuff! If you're looking to spice up your basic pasta dish, then look no further! Hidden within the sauce is about 4 cups of kale. An easy way to get your dark leafy greens into your and your children. My kids didn't even realize it was kale...they thought it was herbs.

To top off the pasta, you not only have your roasted peppers from a jar, which I picked up from Costco, but you also have tomato, garlic, and delicious mushrooms. Yummy! My kids had no problem eating this, and like I said above, they didn't even notice the kale in the sauce. We told the oldest one a few days later that there was kale in it, and he just shrugged and said it was still good!

  • 2 jars plain Alfredo sauce
  • 2 Tbsp minced garlic
  • 4 cups chopped kale and/or spinach
  • 1 tsp minced basil
  • 1/4 cup Parmesan cheese
  • 5-6 mild Italian sausages
  • 4 roasted peppers {from a jar}, yellow and red, sliced
  • 1 roma tomato, diced
  • 4-5 mushrooms, diced
  • 1 box whole wheat rotini pasta

  1. Preheat the oven to 400°F.
  2. Lightly grease a casserole dish with olive oil, add sausages and put in the oven for 10 minutes.
  3. In a medium pot, combine the Alfredo sauce, garlic, basil, Parmesan cheese and set on low heat, stirring often.
  4. In a food processor or blender {I used a mini food chopper}, add your kale and/or spinach. Puree the heck out of it until the kids can't recognize it. Add pureed kale/spinach to sauce. Continue stirring.
  5. Bring a large pot of water to a boil. Add rotini to boiling water and cook as directed on package.
  6. Remove sausages from oven. On a large cutting board, using tongs, cut sausages into large slices. Put back in oven for another 5-10 minutes, checking and stirring often. Cook thoroughly.
  7. In a medium saucepan, add 2 Tbsp olive oil, heating over medium heat. Add roasted peppers, tomatoes and more garlic if desired. Saute until most of the moisture from the peppers goes away. Add mushrooms. Cook for another minute.
  8. Remove cooked sausages and add just over half of them to the sauce, stir. Salt to taste.
  9. Plate your pasta, add your sauce, and top with remaining sausages and sauteed vegetables.
