Peppermint Sweets

These peppermint sweets are a perfect Valentine's treat, or great everyday treat for those of you who have a sweet tooth. I found this recipe in The Unofficial Hunger Games Cookbook, and decided to make them for my Catching Fire DVD Release party coming up in about a month. I wanted to test out each treat beforehand, to see if they actually tasted good....and good thing I did, too, because there was a certain bread recipe that was a total fail. It ended up looking like a giant chocolate chip cookie that got burnt in the oven. Oops hahaha!

I made these sweet treats with my 5 year old. It's pretty easy to make. The only thing is that you have to have some patience because you have to let the patties dry out for an hour on each side. Tristan, my 5 year old, had to be very patient. He was asking me every 5 minutes if the peppermint sweets were ready yet.

Ingredients:
  • 3/4 cup condensed milk
  • 1 tsp vanilla extract
  • 2 tsp peppermint extract
  • 4 cups icing sugar
  • 4 cups semisweet chocolate chips
  • 2 tsp shortening
  • sprinkles for decorating

Directions:
  1. Line a baking sheet with waxed paper.
  2. In a large bowl, combine the condensed milk and extracts. Stir in 3 1/2-4 cups of the icing sugar to form a stiff dough.
  3. Turn dough out onto a clean surface sprinkled with icing sugar. Knead in enough remaining sugar to form a dough that is very stiff and not sticky. Shape into 1/2" balls.
  4. Place balls onto prepared baking sheet. Flatten into small patties and let dry for 1 hour. Turn over and let dry for another hour. Place patties in freezer to 15-30 minutes.
  5. Using a heat-safe glass bowl, heat the chocolate and shortening in the microwave for 30 seconds. Stir, then heat again for another 30 seconds, continuing in 30 second increments until the chocolate and shortening are melted. Allow to thoroughly cool, at least 20 minutes. Using a fork, dip patties into cooled chocolate mixture and place on waxed paper to harden.
  6. Immediately decorate with sprinkles, if using.
