Zesty Tuna Roll-ups with Whole Wheat Tortillas

Zesty Tuna Roll-ups with Whole Wheat Tortillas

Tuna is a fat burning powerhouse that contains a high level of protein, is high in Omega-3 fatty acids, low in saturated fat, and packed full of nutrients. Combine it with whole wheat tortillas and veggies and you've got a recipe for a nutritious and tasty meal that both you and your kids will love.

I made this recipe with my 5 year old son, it is very easy to make. I helped him do the measuring, while I did the cutting and rolling of the wraps, and he stuck the toothpicks in. Because he helped me make this for dinner, he was super excited to eat it. I was a little bit worried they wouldn't like it, being the picky eaters that they are used to be before we started eating healthy.

Ingredients:
  • 2 cans water-packed tuna, drained
  • 1/3 cup diced grape tomatoes
  • 1/3 cup diced celery
  • 1/4 cup minced red onions
  • 1/4 cup crumbled light feta cheese
  • 3 Tbsp mayonnaise
  • 2 Tbsp light sour cream
  • 2 Tbsp chopped black olives {optional}
  • 2 Tbsp sweet pickle relish
  • 1 Tbsp freshly squeezed lemon juice
  • salt and pepper to taste
  • 4 small whole wheat flour tortillas
  • 4 lettuce leaves {any type}


Directions:
  1. Start by dicing up the tomatoes, celery, and red onions. Throw them into a large bowl. Add each of the other ingredient to the bowl as well, except for the tortillas and lettuce. Mix well.
  2. Working on one tortilla at a time, lay a piece of lettuce down on the bottom half of each tortilla, and then spoon 1/4 of the tuna mixture on top of the lettuce. Spread the tuna mixture to the edges. Roll it up as tightly as possible. I found that mine would not stay closed without toothpicks or laying them upside down. If you're not a visual person it might not matter, but I guess they just don't look right when they are not upright. Cut in half using a sharp knife. I like to cut on an angle, giving a more "fancier" look. Repeat with the remaining 3. 
  3. Serve immediately or cover with Seran wrap and store in the fridge until ready to serve.
